Raisin Bran Muffins

Ingredients

  • 1 c boiling water (2)

  • 1 c seedless raisins (2) 

  • 2 t soda 

  • 2  3/4 c flour

  • 1/2 t salt 

  • 2 c All Bran 

  • 1c 40% Bran flakes 

  • 1/2 c vegetable oil 

  • 1 c sugar

  • 2 eggs

  • 2 c buttermilk

Instructions

  1. Pour boiling water over raisins. Add soda and cool 

  2. Mix flour and salt and add cereals. I like to do in separate bowl and mix together well.

  3. Beat oil and sugar together and add eggs one at a time, beating well after each. Add dry ingredients  alternately with buttermilk. Stir in raisins, water and soda

  4. Mix brown sugar and cinnamon for a topping before baking. 

  5. Bake at 375 for 20-25 minutes

Notes:

These muffins will keep uncooked in refrigerator for 4-6 weeks
