Raisin Bran Muffins

Ingredients
1 c boiling water (2)
1 c seedless raisins (2)
2 t soda
2 3/4 c flour
1/2 t salt
2 c All Bran
1c 40% Bran flakes
1/2 c vegetable oil
1 c sugar
2 eggs
2 c buttermilk
Instructions
Pour boiling water over raisins. Add soda and cool
Mix flour and salt and add cereals. I like to do in separate bowl and mix together well.
Beat oil and sugar together and add eggs one at a time, beating well after each. Add dry ingredients alternately with buttermilk. Stir in raisins, water and soda
Mix brown sugar and cinnamon for a topping before baking.
Bake at 375 for 20-25 minutes
Notes:
These muffins will keep uncooked in refrigerator for 4-6 weeks
