California Casserole

Ingredients

  • ½ cup oleo (margarine)

  • 1 cup chopped onion

  • 2 cups sour cream

  • 1 cup cottage cheese - cream style

  • 1 teaspoon salt

  • ¼ teaspoon pepper

  • 2 (4-oz) can diced green chilies, drained

  • 4 cups cooked rice

  • 2 cups grated cheddar

Instructions

  1. Saute onion in oleo. Remove from heat and stir in rice, sour cream, cottage cheese, and salt and pepper.

  2. Layer half of rice mixture in casserole, then chilies, then 1 cup cheese. 

  3. Put other half of rice mixture on top.

  4. Bake at 350 for 25 minutes. (Add other half of cheese about 10-15 minutes before it comes out of oven.
