Caramel Icing

Ingredients

  • 2 sticks butter

  • 3 cups of sugar (separated)

  • 1 cup milk

  • 1 teaspoon vanilla

Instructions

  1. In a cast iron skillet, caramelize 2 sticks butter and 1 cup sugar on medium until color of cake

  2. At the same time, combine 2 cups of sugar and 1 cup whole milk in a saucepan. Bring to a boil, twice. (Turn off, and bring to boil again)

  3. Add contents of skillet to saucepan, stirring until mixture reaches 239 degrees.

  4. Move saucepan to counter for 15 minutes, beating intermittently.

  5. After, add 1 teaspoon vanilla and beat until spreading consistency. (Add milk as needed to reach proper consistency)
