Caramel Icing

Ingredients
2 sticks butter
3 cups of sugar (separated)
1 cup milk
1 teaspoon vanilla
Instructions
In a cast iron skillet, caramelize 2 sticks butter and 1 cup sugar on medium until color of cake
At the same time, combine 2 cups of sugar and 1 cup whole milk in a saucepan. Bring to a boil, twice. (Turn off, and bring to boil again)
Add contents of skillet to saucepan, stirring until mixture reaches 239 degrees.
Move saucepan to counter for 15 minutes, beating intermittently.
After, add 1 teaspoon vanilla and beat until spreading consistency. (Add milk as needed to reach proper consistency)
