Coconut Pound Cake

Ingredients

  • 2 cups sugar

  • 1 cup vegetable shortening

  • 5 eggs

  • 1 teaspoon vanilla

  • 2 cups flour

  • 1/2 teaspoon salt

  • 1 1/2 teaspoons baking powder

  • 1 cup buttermilk

  • 1 cup fresh or frozen coconut

  • 1 cup sugar

  • 1 cup water

Instructions

  1. Cream sugar and add shortening. 

  2. Add eggs, one at a time, and beat after each addition. Beat at least 1 minute after adding each egg. 

  3. Add vanilla.

  4. Sift flour, salt and baking powder together.

  5. Add flour, buttermilk and coconut to sugar-egg mixture. 

  6. Put in tube pan and bake 1 hour at 325 F degrees

  7. Shortly before removing cake from oven, combine 1 cup sugar and 1 cup water. Boil 1 minute. Remove cake from oven and pour sugar mixture over cake while hot.
