French Onion Soup

Ingredients

  • 5 cups thinly sliced Spanish onions

  • 1/2 teaspoon sugar

  • 1/4 cup butter

  • 3 tablespoons flour

  • 8 cups beef broth stock

  • 1/2 teaspoon salt

  • Pepper to taste

  • 6 slices of French bread

  • 1/2 cup grated Swiss cheese

  • 2 tablespoons Parmesan cheese

Instructions

  1. Sprinkle onion slices with sugar. Saute slowly in butter until delicate gold color. Stir in flour.

  2. Add beef broth (or three cans of condensed beef broth and three cans of water)

  3. Cover and simmer gently for 45 minutes.

  4. Add salt and pepper.

  5. Place in a large or individual bowls (preferred!). Top with toasted bread slices (butter lightly) and sprinkle with grated Swiss and Parmesan cheese.

  6. Bake at 400 degrees (ca. 8 minutes) until golden brown.
