German Watermelon Salad

Ingredients
1 red onion
5-6 ounces of feta cheese
Watermelon
Arugula (rocket) salad preferred (can substitute lamb’s lettuce if easier to find)
lemon juice
walnut oil
salt, pepper
1/3 cup roasted (do it yourself!) pine nuts
Instructions
Roast the pine nuts
Mix ingredients to taste.
Watermelon and salad should be roughly 3x the amount of cheese used (but it’s all up to your own taste of course)
