Marshmallow Sweet Potatoes

Ingredients

  • 1 tablespoon butter

  • 3 medium sweet potatoes of yams

  • 3 tablespoons brown sugar

  • 1 bag marshmallow

Instructions

  1. Cook fresh sweet potatoes, covered, in enough boiling water to cover for 25-35 minutes. Drain, cool slightly. Peel potatoes, cut into 1/2 inch thick slices.

  2. Layer half the potatoes, spread half the brown sugar and butter. Repeat layers.

  3. Bake uncovered at 375 degrees for 30-35 minutes, spooning butter mixture over potatoes once or twice.

  4. Cover with marshmallow and bake for 5 more minutes.
