Swiss Cheese Quiche

Ingredients

  • 6 oz grated Swiss cheese

  • 8 oz crisp bacon, cut into 1/4 inch pieces

  • 2 eggs plus two egg yolks

  • 1 ½ cups heavy cream

  • 1/2 teaspoon salt and dash of white pepper

  • Dash of cayenne and ½ teaspoon dry mustard

  • 2 tablespoons butter

Instructions

  1. Place bacon bits and bottom of uncooked pie pastry in 9” pie pan

  2. Sprinkle grated cheese over bacon

  3. Beat other ingredients and pour them over cheese. Do not fill within 1/8 of an inch of the top.

  4. Sprinkle top with dots of butter.

  5. Bacon 375° oven for 35 minutes or until puffed and brown.

  6. Cut into wedges.
