Zucchini Pesto Quiche

Ingredients
3 small zucchinis
2 tablespoons pesto
3 1/4 cup grated cheese (swiss or mozzarella)
2 cloves garlic
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper
3 eggs
1 cup sour cream
Starch as needed
1 frozen puffed pastry
Instructions
Slice and quarter zucchini, precook in microwave for 5 minutes (should be soft).
Combine zucchini, pesto, cheese, seasonings and starch in mixing bowl.
Fill pastry shell in pie or quiche dish.
Mix eggs and sour cream with other ingredients and add to pastry shell.
Bake at 375 degrees for approximately. 45 minutes.
